Yesterday we celebrated Brandi’s birthday with lunch and since mine was the last birthday in July, I made the meal. We had Maxine sandwiches, heart attack potatoes and Heath bar cake.
When we were kids, our neighbor,Maxine,made these sandwiches and we’ve always identified them with her name.
Maxine Sandwiches
1 can Spam
1lb. Velveta cheese
1 can cream of mushroom soup
Grind Spam and cheese together and mix in soup. Spoon onto split hamburger buns and put under broiler until cheese melts.

Wow Maxine Sandwiches were called Parkway specials when I was a kid, that was the nameof my grade school. We had them for lunch at least a couple times a month. I loved those sandwiches…now I have to make them. Yum

I was afraid to eat a hot dog today….it would be foodacide for me to eat this sandwich….but it sounds good. Ah, getting older and dealing with digestive problems. We can all transport ourselves to another place in time.

Heart Attack Potatoes are those yummy oven hash browns with canned soup, sour cream, shredded cheese, melted butter and bacon all thrown in together. Can’t you just feel your arteries clogging up? Thus — the name heart attack potatoes!
