Rhubarb Nut Muffins

This is Connie’s muffins recipe – I’m going to try to make them this week, too.

Rhubarb Nut Muffins

1-1/2 c. Flour

3/4 c. Packed brown sugar

1/2 tsp. Baking soda

1/2 tsp. Salt

1/3 c. Vegetable oil

1 egg, lightly beaten

1/2 c. Buttermilk

1 tsp. Vanilla

1 c. Diced rhubarb

1/2 c. Chopped walnuts

Topping

1/4 c. Packed brown sugar

1\4 c. Chopped walnuts

1/2 tsp. Cinnamon

Combine flour, brown sugar, baking soda and salt.

Combine oil, egg, buttermilk, and vanilla. Stir into dry ingredients just until moistened.

Fold in rhubarb and walnuts.

Fill greased muffin cups 2/3 full. Combine topping ingredients and sprinkle over Muffins,

Bake at 375 for 20-25 minutes. lol on wire rack. Makes 10-12 Muffins.

Now you’ll have the recipe for next weekend’s brunch, if you need it. I’ve been too busy to even cut my rhubarb but this is very tempting to try.

It’s gotten sorta cool here this weekend – tonite when I was working outside I had to wear my jeans. My porch door is even closed – too cool and too breezy.

I’m still reading The Outsider – it’s very good but now I’m ready for it to end. So often I think books tend to drag on. I guess I’m easily bored. Went to the movie “The Book Club” this afternoon – guess I wouldn’t give it much of a rating –just my personal opinion.

Connie has another finished quilt which I’ll show you tomorrow along with the book it came from.

    Thanks for the recipe, it sounds very good!
    It is cool here too, ( Montana, mountains west of Helena) we had rain over night, not quite 1/2″, and rain and SNOW mix this afternoon!! My windows are closed too and a down jacket!! I have covered my flowers in fear it will freeze tonight! We had 83 yesterday!

    Those look delicious. Thanks for sharing the recipe. It’s been much hotter in Central Ohio than normal. I’d love to see it go back to the 70’s. My friends and I thought The Book Club was hysterical. Maybe we’re just weird!! Thanks for sharing all of the info from the farm, Reed and family, and Connie’s quilts. Fun to see.

    I will make them tomorrow. The rhubarb needs to be cut anyhow. Hope it doesn’t rain though. We had 12″ since 5-1. The roof is coming soon we don’t need another hail storm. Keep dry.

    It’s a shame about The Book Club. It looks like the kind of movie (to me) that the previews are showing all the highlights. Hate when that happens.

    Felt the same way about the Book Club. It seemed as though I had seen the best parts over and over in the TV ads. Connie’s muffins look good, and I don’t even like rhubarb.
